Ingredients:
Frosting: Brown butter
3 tablespoons butter
1/2 cup icing sugar
1 table milk
1 1/4 cups flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 eggs
1/2 cup plain yogurt
1 teaspoon vanilla
1 teaspoon lemon zest
1 cup apple
125 ml rolled oats
60 ml almonds
1/2 vegetable oil
2 eggs
3 tablespoons butter

Directions
1. Preheat oven to 350°C/ 180°F.
2. Lightly butter one 9 x 5 inch loaf pan or four small loaf pans.
3. In a small bowl, prepare an apple shredded and squeezed dry.
4. In a medium bowl, mix flour, sugar, baking powder, nutmeg, cinnamon, baking soda, rolled oats, almonds and salt; set aside.
5. In a different medium bowl, whisk the eggs. Add the oil and plain yogurt.
6. Stir in the apple, 1 teaspoon vanilla and citrus zest to the egg mixture.
7. Fold into the dry mixture until just combined.
8. Spread batter into the pans.
9. Bake for about 35-40 minutes. Cool for 30 minutes in the pans on a rack.
